Over an afternoon of watching rugby (mostly singing rugby songs if I’m honest) we spent a good few hours making white bread rolls and some lovely pesto burgers. Still a while to go before barby weather but until then…
Pesto Burgers – Makes 3
- 250g minced steak (don’t go for the lean stuff as you need a bit of fat to stop it crumbling)
- 2 tsp pesto
- Half a beaten egg
- Dash of soy sauce
- Black Pepper
Put the mince, pesto, soy and pepper into a bowl and mix well. Add half of the beaten egg and mix some more. Shape into patties (I like mine quite thick to stop them from drying out), cover and put in the fridge to allow them to firm up.
When you’re ready to serve, put into a lightly oiled, very hot frying pan and cook for a few mins on each side (or more according to how well done you like them). Whilst still in the pan, top with a slice of nice mozzarella and serve in a bun, spread with a bit more pesto, lettuce and tomato.
The bun recipe is this Hairy Bikers one and it works well. Be sure to knead it for the full time, and give the buns enough time to properly rise after the knock back. I glazed mine with the rest of the beaten egg for a nice golden glow.
We’ve eaten the remaining rolls warmed with some nutella and lots of coffee this morning. Perfect Sunday times.
